Sunflower Butter Sandwich

Ingredients

  • 2 Tbsp sunflower butter
  • 2 slices whole wheat bread
  • ½ banana, thinly sliced crosswise
  • ½ red bell pepper, thinly sliced
  • 1 clementine, peeled and cut into wedges
  • ½ cup veggie straws
  • 1 Tbsp Ranch dressing

Instructions

  1. Spread sunflower butter on 1 slice of bread; top with banana slices and second slice of bread. If desired, use a biscuit cutter or the rim of a round glass to cut out sandwich. Or use a knife to cut off the crust.
  2. Divide bell pepper, clementine wedges, veggie straws, and dressing among remaining lunchbox compartments.
