Chicken Nuggets and Broccoli Salad

Ingredients
- ½ (16-oz) pkg frozen chicken nuggets
- 6 cups broccoli florets
- 1 cup shredded Cheddar cheese
- ¼ cup dried cranberries
- ¼ cup salted sunflower seeds
- ¼ cup finely chopped red onion
- 1 cup mayonnaise
- 3 Tbsp honey
- 1 Tbsp apple cider vinegar
- ½ apple, thinly sliced
- ¼ cup blueberries
- 1 Tbsp ketchup
Instructions
- Bake 6 chicken nuggets according to package directions.
- Cook broccoli in a pot of boiling water 1 minute or until bright green. Plunge into a bowl of ice water; drain, cool, and finely chop broccoli.
- Combine broccoli, cheese, cranberries, seeds, and onion in a bowl.
- Whisk together mayonnaise, honey, and vinegar; pour over broccoli mixture, and toss.
- Divide 6 nuggets, ⅓ cup prepared broccoli salad, apple slices, blueberries, and ketchup among lunchbox compartments.
