Chicken Nuggets and Broccoli Salad

Ingredients

  • ½ (16-oz) pkg frozen chicken nuggets
  • 6 cups broccoli florets
  • 1 cup shredded Cheddar cheese
  • ¼ cup dried cranberries
  • ¼ cup salted sunflower seeds
  • ¼ cup finely chopped red onion
  • 1 cup mayonnaise
  • 3 Tbsp honey
  • 1 Tbsp apple cider vinegar
  • ½ apple, thinly sliced
  • ¼ cup blueberries
  • 1 Tbsp ketchup

Instructions

  1. Bake 6 chicken nuggets according to package directions.
  2. Cook broccoli in a pot of boiling water 1 minute or until bright green. Plunge into a bowl of ice water; drain, cool, and finely chop broccoli.
  3. Combine broccoli, cheese, cranberries, seeds, and onion in a bowl.
  4. Whisk together mayonnaise, honey, and vinegar; pour over broccoli mixture, and toss.
  5. Divide 6 nuggets, ⅓ cup prepared broccoli salad, apple slices, blueberries, and ketchup among lunchbox compartments.
