Ham and Asparagus Frittata

Ingredients

  • 1 lb asparagus, trimmed and cut into 1-inch pieces
  • ½ lb sliced low sodium ham, chopped
  • 1 clove garlic, minced
  • 2 Tbsp olive oil
  • 8 large eggs
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat broiler. Sauté asparagus, ham, and garlic in hot oil in a broiler-safe 10-inch skillet over medium-high heat 3 minutes or until tender and browned.
  2. Whisk together eggs, salt, and pepper.
  3. Reduce heat to medium. Add eggs to skillet; stir quickly. Cook, without stirring, until eggs begin to set. Transfer to oven.
  4. Broil 3 to 5 minutes or until puffed and set. Cut frittata into wedges.
