Spiced Turkey and Apple Breakfast Sausage

Ingredients

  • 1 lb lean ground turkey
  • 1 small apple, peeled and shredded
  • 2 Tbsp finely chopped green onion
  • 1½ tsp apple pie spice
  • 1½ tsp crushed fennel seeds
  • 1 tsp dried thyme
  • 1 tsp rubbed sage
  • ½ tsp salt
  • ⅛ tsp cayenne pepper
  • 1 Tbsp olive oil

Instructions

  1. Mix together all ingredients except oil in a large bowl. Shape into 2-inch patties.
  2. Cook patties, in 2 batches, in ½ Tbsp hot oil per batch in a large skillet over medium-high heat 4 minutes per side or until centers are no longer pink.

Side Dish Ingredients

  • 1 lb sweet potatoes, cut into ½-inch wedges
  • 1½ tsp maple syrup
  • 1½ tsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Bake 20 to 25 minutes or until potatoes are browned and tender, stirring once halfway through baking.
