Strawberry-Avocado Toast

Honey-Greek Yogurt Berries

Ingredients

  • 1 lemon
  • 1 large avocado
  • ⅛ tsp salt
  • 4 (1-oz) slices whole grain bread, toasted
  • 1 cup sliced strawberries
  • ½ cup crumbled feta cheese
  • 1 Tbsp balsamic glaze
  • 2 Tbsp chopped fresh basil

Instructions

  1. Grate zest and squeeze juice from lemon. Mash avocados in a bowl to desired consistency; stir in lemon zest, lemon juice, and salt.
  2. Spread avocado on toast slices; top with berries, cheese, and balsamic glaze. Sprinkle with basil.

  • ½ (16-oz) pkg strawberries, halved
  • 1 (11-oz) pkg blueberries
  • 1 (5.3-oz) carton fat free plain Greek yogurt
  • 1 Tbsp honey

Side Dish Instructions

  1.  Divide berries among 4 small bowls; top with yogurt, and drizzle with honey.
