Savory Sun-Dried Tomato French Toast
Crispy BaconIngredients
- ½ cup part skim ricotta cheese
- 3 Tbsp finely chopped sun dried tomatoes in oil
- ½ tsp Italian seasoning
- 8 (1-oz) slices whole grain bread
- ½ cup milk
- 2 large eggs
- ½ tsp salt
- ½ tsp pepper
Instructions
- Combine ricotta, tomatoes, and Italian seasoning in a bowl.
- Spread ricotta mixture on 4 bread slices. Top with remaining bread slices, pressing gently around edges to seal.
- Heat a griddle or large nonstick skillet coated with cooking spray over medium-high heat.
- Whisk together milk, eggs, salt, and pepper in a shallow dish. Dip sandwiches in egg mixture, soaking 30 seconds per side.
- Cook sandwiches on hot skillet or griddle 2 minutes per side or until golden.
