Savory Sun-Dried Tomato French Toast

Ingredients

  • ½ cup part skim ricotta cheese
  • 3 Tbsp finely chopped sun dried tomatoes in oil
  • ½ tsp Italian seasoning
  • 8 (1-oz) slices whole grain bread
  • ½ cup milk
  • 2 large eggs
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Combine ricotta, tomatoes, and Italian seasoning in a bowl.
  2. Spread ricotta mixture on 4 bread slices. Top with remaining bread slices, pressing gently around edges to seal.
  3. Heat a griddle or large nonstick skillet coated with cooking spray over medium-high heat.
  4. Whisk together milk, eggs, salt, and pepper in a shallow dish. Dip sandwiches in egg mixture, soaking 30 seconds per side.
  5. Cook sandwiches on hot skillet or griddle 2 minutes per side or until golden.
