Chicken and Blue Cheese Sandwiches

Ingredients

  • 1 lb chicken tenderloins
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup mayonnaise
  • ¼ cup crumbled blue cheese
  • ¼ tsp dried crushed rosemary
  • 4 whole wheat hamburger buns, toasted
  • 4 thin slices red onion
  • 4 leaves green leaf lettuce

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in a large nonstick skillet coated in cooking spray over medium heat 5 to 7 minutes or until done.
  2. Meanwhile, stir together mayonnaise, cheese, and rosemary in a small bowl.
  3. Spread mayonnaise mixture over bun bottoms; top with lettuce, onion, and chicken. Cover with bun tops to assemble sandwiches.
