Sausage and Vegetable Skillet

Ingredients

  • 1½ cups long grain white rice
  • 1 (12-oz) pkg frozen broccoli florets
  • 1 (14-oz) pkg smoked sausage, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 Tbsp olive oil
  • 1 (8-oz) can tomato sauce
  • ½ cup less sodium chicken broth
  • 1½ tsp garlic powder
  • 1 cup shredded pepper Jack cheese

Instructions

  1. Cook rice and microwave broccoli according to package directions.
  2. Meanwhile, cook sausage, bell pepper, and onion in hot oil in a large skillet over medium-high heat 8 minutes or until browned.
  3. Reduce heat to medium; stir in tomato sauce, broth, and garlic powder. Cook 6 minutes or until thickened. Stir in rice and broccoli until combined. Top with cheese; cook 1 minute or until melted.
