Sausage and Vegetable Skillet
Ingredients
- 1½ cups long grain white rice
- 1 (12-oz) pkg frozen broccoli florets
- 1 (14-oz) pkg smoked sausage, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 Tbsp olive oil
- 1 (8-oz) can tomato sauce
- ½ cup less sodium chicken broth
- 1½ tsp garlic powder
- 1 cup shredded pepper Jack cheese
Instructions
- Cook rice and microwave broccoli according to package directions.
- Meanwhile, cook sausage, bell pepper, and onion in hot oil in a large skillet over medium-high heat 8 minutes or until browned.
- Reduce heat to medium; stir in tomato sauce, broth, and garlic powder. Cook 6 minutes or until thickened. Stir in rice and broccoli until combined. Top with cheese; cook 1 minute or until melted.
