Ingredients

  • 1 (12-oz) pkg frozen diced sweet potatoes
  • ½ lb plant based ground beef
  • 2 small cloves garlic, minced
  • 1 tsp salt free Southwest chipotle seasoning
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp canola oil
  • 3 Roma tomatoes, chopped
  • 1 avocado, chopped
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Microwave sweet potatoes according to package directions.
  2. Meanwhile, cook plant based beef, garlic, Southwest seasoning, salt, and pepper in hot oil in a skillet over medium-high heat 8 minutes or until plant-based beef is browned and crumbly.
  3. Add potatoes to skillet; cook until thoroughly heated. Top with tomatoes, avocado, and cilantro.
