Crispy Ranch Chicken
Lemon Pasta and Steamed Green Beans
Ingredients
- 2 lb boneless, skinless chicken breasts
- ½ cup butter
- 1 (1-oz) envelope Ranch dressing mix
- 1½ cups crushed cornflakes cereal
- ½ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 400°F. Cut chicken breasts in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
- Melt butter in microwave in a medium bowl.
- Stir together dressing mix, cornflakes, and cheese in a separate bowl. Dip chicken in butter, and dredge in cornflake mixture to coat. Place chicken on a lightly greased rack over a rimmed baking sheet.
- Bake 20 to 25 minutes or until chicken is golden brown and done.
Side Dish Ingredients
- 1 (16-oz) pkg spaghetti
- 1 lemon
- 1 cup freshly grated Parmesan cheese
- 2 (8-oz) pkg thin green beans
Side Dish Instructions
- Cook pasta according to package directions, drain, reserving ½ cup pasta water, and return to pot.
- Meanwhile, grate zest and squeeze juice from lemon. Toss lemon zest, lemon juice, cheese, and, if desired, salt and pepper with pasta mixture over low heat until combined.
- Steam green beans according to package directions.
