Crispy Ranch Chicken

Lemon Pasta and Steamed Green Beans

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ cup butter 
  • 1 (1-oz) envelope Ranch dressing mix
  • 1½ cups crushed cornflakes cereal
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Cut chicken breasts in half crosswise and pound to an even thickness between plastic wrap using a meat mallet.
  2. Melt butter in microwave in a medium bowl.
  3. Stir together dressing mix, cornflakes, and cheese in a separate bowl. Dip chicken in butter, and dredge in cornflake mixture to coat. Place chicken on a lightly greased rack over a rimmed baking sheet.
  4. Bake 20 to 25 minutes or until chicken is golden brown and done.

Side Dish Ingredients

  • 1 (16-oz) pkg spaghetti
  • 1 lemon
  • 1 cup freshly grated Parmesan cheese
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Cook pasta according to package directions, drain, reserving ½ cup pasta water, and return to pot.
  2. Meanwhile, grate zest and squeeze juice from lemon. Toss lemon zest, lemon juice, cheese, and, if desired, salt and pepper with pasta mixture over low heat until combined.
  3. Steam green beans according to package directions.
