Chicken Caprese Pasta

Ingredients
- 1 (12-oz) pkg gluten free penne pasta
- 1½ lb boneless, skinless chicken breasts
- 2 Tbsp salt free Greek seasoning
- 2 Tbsp olive oil, divided
- 1½ cups balsamic vinaigrette
- 2 Roma tomatoes, chopped
- 2 (0.5-oz) pkg fresh basil, thinly sliced
- 1½ cups cubed mozzarella cheese
Instructions
- Cook pasta according to package directions.
- Meanwhile, pound chicken to an even thickness between plastic wrap using a meat mallet; sprinkle with seasoning.
- Cook chicken, in 2 batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat 3 to 4 minutes or until done. Slice chicken.
- Toss pasta with vinaigrette, tomatoes, basil, and cheese. Divide among 6 plates; top with chicken.
