Mango-Chicken Quinoa Bowls
Ingredients
- 2 (3-oz) pouches boil in bag quinoa
- 1 mango, chopped
- ½ tsp chili powder
- Dash of cayenne pepper
- 1½ cups shredded rotisserie chicken
- 1 avocado, sliced
- ¼ cup cilantro lime dressing
Instructions
- Cook quinoa according to package directions.
- Meanwhile, sprinkle mango with chili powder and cayenne. Divide quinoa among 4 bowls or to-go containers. Top with chicken, avocado, and spicy mango; drizzle with dressing.
