Ingredients

  • 2 (3-oz) pouches boil in bag quinoa
  • 1 mango, chopped
  • ½ tsp chili powder
  • Dash of cayenne pepper
  • 1½ cups shredded rotisserie chicken
  • 1 avocado, sliced
  • ¼ cup cilantro lime dressing

Instructions

  1. Cook quinoa according to package directions.
  2. Meanwhile, sprinkle mango with chili powder and cayenne. Divide quinoa among 4 bowls or to-go containers. Top with chicken, avocado, and spicy mango; drizzle with dressing.
