Teriyaki Meatballs with Pineapple

Ingredients

  • ½ lb ground pork
  • ½ cup panko breadcrumbs
  • ½ tsp garlic powder
  • ⅛ tsp salt
  • 1 large egg yolk
  • 1 green onion, thinly sliced
  • 1 cup pineapple chunks
  • 2 tsp vegetable oil
  • ⅓ cup teriyaki sauce
  • 3 Tbsp chopped peanuts, optional

Instructions

  1. Preheat oven to 425°F. Combine pork, breadcrumbs, garlic powder, salt, egg yolk, and green onion in a medium bowl; gently mix together using your hands.
  2. Roll pork mixture into 1½-inch balls. Place on a greased rimmed baking sheet. Bake 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes of baking.
  3. Meanwhile, cut pineapple into bite-sized pieces. Cook pineapple in hot oil in a skillet over medium-high heat 8 minutes or until browned.
  4. Warm teriyaki sauce in a saucepan over medium heat or in a microwave. Divide Green Onion Rice Noodles recipe between 2 bowls. Top with meatballs, pineapple, and teriyaki sauce. Sprinkle with chopped peanuts, if desired.

  1. Cook rice noodles according to package directions. Drain, and toss with oil and green onion.
