Teriyaki Meatballs with Pineapple
Green Onion Rice Noodles
Ingredients
- ½ lb ground pork
- ½ cup panko breadcrumbs
- ½ tsp garlic powder
- ⅛ tsp salt
- 1 large egg yolk
- 1 green onion, thinly sliced
- 1 cup pineapple chunks
- 2 tsp vegetable oil
- ⅓ cup teriyaki sauce
- 3 Tbsp chopped peanuts, optional
Instructions
- Preheat oven to 425°F. Combine pork, breadcrumbs, garlic powder, salt, egg yolk, and green onion in a medium bowl; gently mix together using your hands.
- Roll pork mixture into 1½-inch balls. Place on a greased rimmed baking sheet. Bake 15 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes of baking.
- Meanwhile, cut pineapple into bite-sized pieces. Cook pineapple in hot oil in a skillet over medium-high heat 8 minutes or until browned.
- Warm teriyaki sauce in a saucepan over medium heat or in a microwave. Divide Green Onion Rice Noodles recipe between 2 bowls. Top with meatballs, pineapple, and teriyaki sauce. Sprinkle with chopped peanuts, if desired.

- Cook rice noodles according to package directions. Drain, and toss with oil and green onion.
