One-Pan Chicken, Peppers, and Chickpeas

Ingredients

  • 6 sweet mini peppers
  • ½ cup rinsed and drained canned chickpeas
  • 1 Tbsp olive oil, divided
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 tsp Old Bay seasoning
  • 1 lb bone in, skin on chicken leg quarters
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat oven to 425°F. Toss together peppers, chickpeas, ½ Tbsp oil, and ⅛ tsp each salt and pepper on a lightly greased rimmed baking sheet; spread in a single layer.
  2. Whisk together ½ Tbsp oil, seasoning, and ⅛ tsp each salt and pepper in a small bowl; rub over chicken. Nestle chicken among vegetables on baking sheet.
  3. Bake 30 minutes until chicken is done. Sprinkle with cilantro.
