One-Pan Chicken, Peppers, and Chickpeas
Ingredients
- 6 sweet mini peppers
- ½ cup rinsed and drained canned chickpeas
- 1 Tbsp olive oil, divided
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 tsp Old Bay seasoning
- 1 lb bone in, skin on chicken leg quarters
- ¼ cup chopped fresh cilantro
Instructions
- Preheat oven to 425°F. Toss together peppers, chickpeas, ½ Tbsp oil, and ⅛ tsp each salt and pepper on a lightly greased rimmed baking sheet; spread in a single layer.
- Whisk together ½ Tbsp oil, seasoning, and ⅛ tsp each salt and pepper in a small bowl; rub over chicken. Nestle chicken among vegetables on baking sheet.
- Bake 30 minutes until chicken is done. Sprinkle with cilantro.
