Ingredients

  • 2 (16-oz) pkg gnocchi
  • 6 Tbsp olive oil, divided
  • 1 yellow squash, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 pint grape tomatoes
  • 1 (24-oz) jar marinara sauce
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 450°F. Toss together gnocchi and 3 Tbsp oil on a large rimmed baking sheet; spread in a single layer. Toss together vegetables, tomatoes, and 3 Tbsp oil on another large rimmed baking sheet; spread in a single layer.
  2. Bake 20 minutes or until gnocchi are toasted and vegetables are browned and tender, stirring gnocchi and vegetables and swapping pans halfway through baking.
  3. Meanwhile, heat marinara sauce according to package directions.
  4. Divide gnocchi among 6 bowls. Top with vegetables, sauce, and cheese.
