Strawberry-Peanut Butter French Toast

Ingredients
- ¼ cup heavy cream
- ¼ cup creamy peanut butter
- 1 Tbsp sugar
- ½ tsp vanilla extract
- 2 Tbsp butter, divided
- 4 slices frozen French toast, thawed
- 1 cup sliced strawberries
Instructions
- Cook cream, peanut butter, and sugar in a small saucepan over medium heat, whisking constantly, until sugar is dissolved and mixture is smooth. Stir in vanilla. Set aside to cool slightly.
- Melt 1 Tbsp butter in a large nonstick skillet over medium heat. Add 2 slices French toast, and cook, 3 to 4 minutes per side or until browned and crisp. Repeat with remaining butter and toast.
- Serve French toast with peanut butter syrup and berries.
