Meatballs with Blue Cheese Sauce
Mashed Potatoes and Broccoli

Ingredients
- 1½ lb ground sirloin
- 1½ cups panko breadcrumbs
- ½ tsp salt
- ½ tsp pepper
- 4 cloves garlic, minced and divided
- 2 large eggs
- 1 cup plain whole milk yogurt
- ¾ cup crumbled blue cheese
- 2 Tbsp lemon juice
- 2 Tbsp water
- 2 green onions, thinly sliced
Instructions
- Preheat oven to 400F. Stir together beef, breadcrumbs, salt, pepper, half of garlic, and eggs. Shape mixture into 1½ -inch balls; place on two large greased rimmed baking sheets.
- Bake 15 to 20 minutes or until done, shaking pans after 5 minutes of baking.
- Meanwhile, stir together yogurt, cheese, lemon juice, and remaining half of garlic, adding water, 1 Tbsp at a time, to reach desired consistency. Serve sauce with meatballs; sprinkle with green onion.

- 2 (12-oz) pkg broccoli florets
- 1 tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook potatoes and broccoli separately according to package directions. Toss broccoli with garlic powder, salt, and pepper in a bowl.
