Ingredients

  • 1½ lb ground pork
  • 2 Tbsp chopped green onion
  • 5 Tbsp less sodium soy sauce, divided
  • 2 tsp lemongrass paste
  • 2 tsp minced ginger
  • ½ tsp pepper
  • ¼ tsp salt
  • 2 Tbsp sesame oil, divided
  • 2 Tbsp lime juice
  • 1 Tbsp honey

Instructions

  1. Combine pork, onion, 1 Tbsp soy sauce, lemongrass paste, ginger, pepper, and salt; roll mixture into 1-inch balls.
  2. Cook meatballs in 1 Tbsp hot oil in a large skillet over medium-high heat 12 to 15 minutes or until centers are no longer pink, turning occasionally.
  3. Meanwhile, whisk together 4 Tbsp soy sauce, 1 Tbsp oil, lime juice, and honey. Add to skillet; cook 2 to 3 minutes or until meatballs are done and coated with sauce.

Side Dish Ingredients

  • 1 (16-oz) pkg tricolor coleslaw
  • 4 radishes, sliced
  • ⅓ cup sesame ginger vinaigrette
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped salted peanuts
  • 2 avocados, diced

Side Dish Instructions

  1. Combine slaw, radishes, vinaigrette, cilantro, and nuts in a bowl; top with avocado.
