Ingredients
- 1½ lb ground pork
- 2 Tbsp chopped green onion
- 5 Tbsp less sodium soy sauce, divided
- 2 tsp lemongrass paste
- 2 tsp minced ginger
- ½ tsp pepper
- ¼ tsp salt
- 2 Tbsp sesame oil, divided
- 2 Tbsp lime juice
- 1 Tbsp honey
Instructions
- Combine pork, onion, 1 Tbsp soy sauce, lemongrass paste, ginger, pepper, and salt; roll mixture into 1-inch balls.
- Cook meatballs in 1 Tbsp hot oil in a large skillet over medium-high heat 12 to 15 minutes or until centers are no longer pink, turning occasionally.
- Meanwhile, whisk together 4 Tbsp soy sauce, 1 Tbsp oil, lime juice, and honey. Add to skillet; cook 2 to 3 minutes or until meatballs are done and coated with sauce.
Side Dish Ingredients
- 1 (16-oz) pkg tricolor coleslaw
- 4 radishes, sliced
- ⅓ cup sesame ginger vinaigrette
- ¼ cup chopped fresh cilantro
- ¼ cup chopped salted peanuts
- 2 avocados, diced
Side Dish Instructions
- Combine slaw, radishes, vinaigrette, cilantro, and nuts in a bowl; top with avocado.
