Fennel and Cabbage Coleslaw

Ingredients

  • 3 Tbsp mayonnaise
  • 3 Tbsp olive oil
  • 3 Tbsp rice vinegar
  • 2 tsp lemon zest
  • 2 tsp Dijon mustard
  • 2 tsp honey
  • ½ head red cabbage, thinly sliced
  • ½ head green cabbage, thinly sliced
  • 1 fennel bulb, thinly sliced
  • 2 carrots, grated
  • 4 green onions, thinly sliced

Instructions

  1. Whisk together mayonnaise, oil, vinegar, lemon zest, Dijon, and honey in a large bowl. Add cabbages, fennel, carrots, and green onions; stir until well coated. Season with salt and pepper, if desired .
