Fennel and Cabbage Coleslaw

Ingredients
- 3 Tbsp mayonnaise
- 3 Tbsp olive oil
- 3 Tbsp rice vinegar
- 2 tsp lemon zest
- 2 tsp Dijon mustard
- 2 tsp honey
- ½ head red cabbage, thinly sliced
- ½ head green cabbage, thinly sliced
- 1 fennel bulb, thinly sliced
- 2 carrots, grated
- 4 green onions, thinly sliced
Instructions
- Whisk together mayonnaise, oil, vinegar, lemon zest, Dijon, and honey in a large bowl. Add cabbages, fennel, carrots, and green onions; stir until well coated. Season with salt and pepper, if desired .
