Easy Beef Stroganoff

Ingredients
- 2 lb top sirloin beef, cut into strips
- 4 Tbsp butter, divided
- 1 onion, sliced
- 1 (8-oz) pkg sliced mushrooms
- 2 (0.87-oz) envelopes brown gravy mix
- 2 cups cold water
- ¾ cup sour cream
Instructions
- Season beef with salt and pepper, if desired. Melt 2 Tbsp butter in a large nonstick skillet over medium-high heat. Add beef, and cook, in 2 batches, 5 minutes per batch or until browned. Remove from skillet.
- Melt remaining 2 Tbsp butter in skillet. Add onion and mushrooms; cook 5 minutes or until tender. Whisk together gravy mix and cold water in a bowl; add to onion mixture, and cook until mixture is thickened.
- Return beef to skillet; cook 2 minutes. Stir in sour cream.

- 1 (12-oz) pkg wide egg noodles
- 1 (12-oz) pkg frozen green peas
- 3 Tbsp butter
Side Dish Instructions
- Cook egg noodles and peas according to package directions. Stir butter into peas and season with salt and pepper, if desired.
