Chicken Caesar Salad Nachos

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 Tbsp Montreal chicken seasoning
  • 2 Tbsp olive oil
  • 1 (11-oz) bag tortilla chips
  • 1 (8-oz) pkg shredded mozzarella cheese
  • 1 (6-oz) pkg shredded Parmesan cheese
  • 1 (10-oz) pkg chopped romaine lettuce
  • ¾ cup Caesar dressing

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet; sprinkle with seasoning. Cook chicken in hot oil in a large nonstick skillet over medium heat 5 to 6 minutes per side or until done. Let stand 5 minutes; chop.
  2. Preheat oven to 400°F. Arrange chips on a lightly greased baking sheet. Top with half of cheeses, chicken, and remaining cheeses. Bake 15 minutes or until cheeses are melted and chips are toasted.
  3. Meanwhile, toss together lettuce and dressing. Top nachos with lettuce mixture; drizzle with additional dressing, if desired.
