Blackened Shrimp Alfredo

Roasted Broccoli with Tomatoes and Parmesan

Ingredients

  • 2 lb peeled and deveined large raw shrimp
  • 2 Tbsp blackened seasoning
  • 5 Tbsp butter, divided
  • 2½ cups water
  • 1 cup milk
  • 2 (4.7-oz) pkg fettuccine Alfredo mix
  • 1 (5-oz) container spinach

Instructions

  1. Sprinkle shrimp with blackened seasoning.
  2. Melt 2 Tbsp butter in a large nonstick skillet over medium heat; add shrimp, and cook 2 to 3 minutes per side or until done. Remove from skillet, and keep warm.
  3. Melt 3 Tbsp butter in same skillet over medium heat. Stir in water, milk, and contents from both packages Alfredo mix. Bring to a boil, reduce heat, and simmer, stirring occasionally, until sauce is thickened and pasta is tender.
  4. Gradually add spinach, stirring until wilted. Stir in shrimp.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 1 pint grape tomatoes
  • 3 Tbsp olive oil
  • 1½ tsp garlic salt
  • ¼ cup shredded Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together broccoli, tomatoes, oil, and garlic salt on a large rimmed baking sheet.
  2. Bake 15 minutes or until broccoli is almost tender. Sprinkle with cheese; toss. Bake 3 minutes longer or until tender.
