Ingredients

  • 2 large sweet onions, thinly sliced
  • 3 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 1 (14-oz) loaf Italian bread, halved lengthwise and toasted
  • ⅓ cup creamy horseradish sauce
  • ½ (32-oz) carton beef broth
  • 1½ lb shaved deli roast beef
  • 1 (5-oz) container arugula

Instructions

  1. Cook onions in hot oil in a large skillet over medium heat 3 minutes. Cover and cook 10 minutes or until onions begin to soften.
  2. Uncover, increase heat to medium-high, and cook 5 minutes longer, stirring frequently, until onions begin to brown; add vinegar. Cook 1 minute.
  3. Meanwhile, spread cut sides of bread with horseradish sauce.
  4. Heat broth in a saucepan over medium-high heat; add roast beef, and let stand until hot.
  5. Layer roast beef on bread; top with onions and arugula. Cut into 6 servings. Serve with broth for dipping, if desired.

  • 1 (32-oz) pkg frozen french fries
  • ¼ cup butter, melted
  • 1 Tbsp dried parsley
  • 1 Tbsp minced garlic

Side Dish Instructions

  1. Bake fries according to package directions.
  2. Stir together melted butter, parsley, and garlic in a bowl; drizzle over fries. Toss.
