Ingredients
- 2¼ lb boneless, skinless chicken breasts
- 6 slices prosciutto
- 6 Tbsp peach or fig preserves
- 6 oz Brie cheese, cut into 12 slices
- 1 Tbsp chopped fresh thyme
Instructions
- Preheat oven to 400°F. Wrap each chicken breast in 1 slice prosciutto, and place on a greased rimmed baking sheet.
- Bake 15 minutes. Top with preserves and Brie slices; bake 3 to 5 minutes longer or until chicken is done and cheese melts. Sprinkle with thyme.
Side Dish Ingredients
- 1½ cups pearled Israeli couscous
- 1 (12-oz) pkg frozen sliced carrots
- 3 Tbsp olive oil
- 1 Tbsp chopped fresh thyme
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook couscous and carrots according to package directions.
- Toss together couscous, carrots, oil, thyme, salt, and pepper in a large bowl.
