Ingredients

  • 2¼ lb boneless, skinless chicken breasts
  • 6 slices prosciutto
  • 6 Tbsp peach or fig preserves
  • 6 oz Brie cheese, cut into 12 slices
  • 1 Tbsp chopped fresh thyme

Instructions

  1. Preheat oven to 400°F. Wrap each chicken breast in 1 slice prosciutto, and place on a greased rimmed baking sheet.
  2. Bake 15 minutes. Top with preserves and Brie slices; bake 3 to 5 minutes longer or until chicken is done and cheese melts. Sprinkle with thyme.

  • 1½ cups pearled Israeli couscous
  • 1 (12-oz) pkg frozen sliced carrots
  • 3 Tbsp olive oil
  • 1 Tbsp chopped fresh thyme
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook couscous and carrots according to package directions.
  2. Toss together couscous, carrots, oil, thyme, salt, and pepper in a large bowl.
