Butter-Seared Grouper

Black-Eyed Peas and Olives

Ingredients

  • 2¼ lb grouper fillets
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup butter
  • ¼ cup chopped fresh parsley
  • 1 lemon, cut into wedges

Instructions

  1. Sprinkle fish with salt and pepper. Cook fish, in 2 batches, in 2 Tbsp melted butter per batch in a large skillet over medium-high heat 4 to 5 minutes per side or until fish flakes with a fork.
  2. Transfer fish to a plate. Pour any butter remaining in pan over fish; sprinkle with parsley. Serve with lemon wedges.

  • 1 onion, chopped
  • 3 Tbsp olive oil
  • ¾ cup sliced green olives
  • 2 (15-oz) cans black eyed peas, rinsed and drained
  • ½ cup chopped fresh parsley

Side Dish Instructions

  1. Cook onion in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender.
  2. Add green olives and peas; cook 3 minutes or until thoroughly heated. Stir in parsley.
