Butter-Seared Grouper
Black-Eyed Peas and Olives
Ingredients
- 2¼ lb grouper fillets
- ½ tsp salt
- ½ tsp pepper
- ¼ cup butter
- ¼ cup chopped fresh parsley
- 1 lemon, cut into wedges
Instructions
- Sprinkle fish with salt and pepper. Cook fish, in 2 batches, in 2 Tbsp melted butter per batch in a large skillet over medium-high heat 4 to 5 minutes per side or until fish flakes with a fork.
- Transfer fish to a plate. Pour any butter remaining in pan over fish; sprinkle with parsley. Serve with lemon wedges.

- 1 onion, chopped
- 3 Tbsp olive oil
- ¾ cup sliced green olives
- 2 (15-oz) cans black eyed peas, rinsed and drained
- ½ cup chopped fresh parsley
Side Dish Instructions
- Cook onion in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender.
- Add green olives and peas; cook 3 minutes or until thoroughly heated. Stir in parsley.
