15-Minute Garlic-Rosemary Salmon

Tomato-Goat Cheese Couscous

Ingredients

  • ¾ lb salmon fillets
  • 1 Tbsp butter, melted
  • ⅛ tsp garlic salt
  • ¼ tsp pepper
  • 1 Tbsp chopped fresh rosemary

Instructions

  1. Preheat broiler with oven rack 6 inches from heat. Arrange fish on a foil-lined baking sheet; brush with butter, and sprinkle with garlic salt and pepper.
  2. Broil 5 to 7 minutes or until fish flakes with a fork. Sprinkle with rosemary.

  • 1 cup less sodium chicken broth
  • ¾ cup whole wheat couscous
  • 1 organic tomato, diced
  • 2 green onions, chopped
  • ¼ cup crumbled goat cheese
  • ½ tsp chopped fresh rosemary
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Bring broth to a boil in a large saucepan. Stir in couscous; remove from heat, and let stand, covered, 5 to 6 minutes or until broth is absorbed.
  2. Stir in tomato, onions, cheese, rosemary, salt, and pepper.
