15-Minute Garlic-Rosemary Salmon
Tomato-Goat Cheese Couscous
Ingredients
- ¾ lb salmon fillets
- 1 Tbsp butter, melted
- ⅛ tsp garlic salt
- ¼ tsp pepper
- 1 Tbsp chopped fresh rosemary
Instructions
- Preheat broiler with oven rack 6 inches from heat. Arrange fish on a foil-lined baking sheet; brush with butter, and sprinkle with garlic salt and pepper.
- Broil 5 to 7 minutes or until fish flakes with a fork. Sprinkle with rosemary.
Side Dish Ingredients
- 1 cup less sodium chicken broth
- ¾ cup whole wheat couscous
- 1 organic tomato, diced
- 2 green onions, chopped
- ¼ cup crumbled goat cheese
- ½ tsp chopped fresh rosemary
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Bring broth to a boil in a large saucepan. Stir in couscous; remove from heat, and let stand, covered, 5 to 6 minutes or until broth is absorbed.
- Stir in tomato, onions, cheese, rosemary, salt, and pepper.
