Peanut Butter Cottage Cheese Ice Cream

Ingredients

  • 1 (16-oz) carton full fat cottage cheese
  • ½ cup crunchy peanut butter
  • ¼ cup honey
  • ¼ cup milk
  • 6 pitted dates
  • ¼ tsp sea salt
  • Chopped salted peanuts, optional

Instructions

  1. Line an 8- x 4-inch loaf pan with plastic wrap. Process cottage cheese, peanut butter, honey, milk, dates, and salt in a food processor until smooth.
  2. Spoon mixture into prepared pan, and, if desired, sprinkle with peanuts. Freeze at least 4 hours.
