Super Fast Blueberry Protein Muffins

Ingredients
- 1 cup almond flour
- ⅓ cup vanilla protein powder
- 1 tsp baking powder
- 1 cup unsweetened applesauce
- ½ cup peanut butter
- 2 large eggs
- ½ cup blueberries
Instructions
- Preheat oven to 350°F. Line half of a 12-cup muffin tin with cupcake liners. Combine almond flour, protein powder, and baking powder in a large bowl. Whisk in applesauce, peanut butter, and eggs until smooth. Fold in blueberries.
- Divide batter between liners. Bake 18 to 22 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool completely in pan before transferring to a wire rack. Store in airtight containers in the refrigerator 3 to 5 days.
