Ingredients

  • 1 (15-oz) already rolled out bakery pizza dough
  • ⅓ cup mayonnaise
  • 1½ (8-oz) pkg shredded pepper Jack cheese, divided
  • 1 cup frozen roasted corn, thawed
  • 3 cups shredded rotisserie chicken
  • ¼ cup chopped fresh cilantro
  • 1 (11.62-oz) Mexican street corn salad kit
  • 1 cup crumbled queso fresco

Instructions

  1. Preheat oven to 450°F. Press dough into a 16-inch round on a lightly greased pizza pan. Spread mayonnaise over dough.
  2. Top with 2 cups pepper Jack cheese, corn, chicken, 1 cup pepper Jack cheese, and cilantro. Bake 18 to 20 minutes or until crust is browned and cheese is melted.
  3. Prepare salad kit according to package directions. Top pizza with salad; sprinkle with crumbled cheese.
