Peanut Shrimp Stir-Fry

Ingredients
- ½ (8-oz) pkg rice noodles
- ½ (20-oz) pkg frozen broccoli and vegetable stir fry
- 2 Tbsp olive oil, divided
- ¾ lb peeled and deveined, large raw shrimp
- ½ tsp garlic powder
- ½ cup peanut sauce
- 2 Tbsp chopped roasted, salted peanuts
Instructions
- Cook noodles according to package directions.
- Meanwhile, cook vegetables in 1 Tbsp hot oil in a large skillet over medium-high heat until tender.
- Sprinkle shrimp with garlic powder. Cook shrimp in 1 Tbsp hot oil in another large skillet over medium-high heat 2 to 3 minutes per side or until shrimp are done.
- Add shrimp to vegetables; stir in peanut sauce; cook 3 minutes or until thoroughly heated, stirring to coat.
- Serve shrimp mixture over rice noodles. Sprinkle with nuts .
