Ingredients

  • ½ (8-oz) pkg rice noodles
  • ½ (20-oz) pkg frozen broccoli and vegetable stir fry
  • 2 Tbsp olive oil, divided
  • ¾ lb peeled and deveined, large raw shrimp
  • ½ tsp garlic powder
  • ½ cup peanut sauce
  • 2 Tbsp chopped roasted, salted peanuts

Instructions

  1. Cook noodles according to package directions.
  2. Meanwhile, cook vegetables in 1 Tbsp hot oil in a large skillet over medium-high heat until tender.
  3. Sprinkle shrimp with garlic powder. Cook shrimp in 1 Tbsp hot oil in another large skillet over medium-high heat 2 to 3 minutes per side or until shrimp are done.
  4. Add shrimp to vegetables; stir in peanut sauce; cook 3 minutes or until thoroughly heated, stirring to coat.
  5. Serve shrimp mixture over rice noodles. Sprinkle with nuts .
