Everything Bagel Breakfast Casserole

Ingredients

  • 1 (1-lb) pkg Bob Evans® Pork Sausage Roll
  • 3 Thomas'® Everything Bagels, cubed and toasted
  • 1 red bell pepper, chopped
  • ½ cup sliced red onion
  • 1 (5-oz) container baby spinach
  • 10 large eggs
  • 1½ cups milk
  • 2 Tbsp Dijon mustard
  • 1½ cups shredded Gruyere cheese
  • 6 oz cream cheese, cut into small cubes
  • 1 Tbsp everything bagel seasoning, optional

Instructions

  1. Cook sausage, bell pepper, and onion in a large skillet over medium heat until sausage is browned and crumbly; drain, and place in a large bowl. Add spinach, tossing to wilt. Add toasted bagel cubes; toss.
  2. Whisk together eggs, milk, and Dijon in a bowl. Add to sausage mixture; toss. Stir in shredded cheese. Cover, and refrigerate at least 2 hours or overnight.
  3. Preheat oven to 350°F. Spoon sausage mixture into a lightly greased 13 x 9-inch baking dish. Scatter cream cheese over top of mixture and sprinkle with seasoning, if using.
  4. Bake 35 to 45 minutes or until center is puffed and set.
