Everything Bagel Breakfast Casserole
Ingredients
- 1 (1-lb) pkg Bob Evans® Pork Sausage Roll
- 3 Thomas'® Everything Bagels, cubed and toasted
- 1 red bell pepper, chopped
- ½ cup sliced red onion
- 1 (5-oz) container baby spinach
- 10 large eggs
- 1½ cups milk
- 2 Tbsp Dijon mustard
- 1½ cups shredded Gruyere cheese
- 6 oz cream cheese, cut into small cubes
- 1 Tbsp everything bagel seasoning, optional
Instructions
- Cook sausage, bell pepper, and onion in a large skillet over medium heat until sausage is browned and crumbly; drain, and place in a large bowl. Add spinach, tossing to wilt. Add toasted bagel cubes; toss.
- Whisk together eggs, milk, and Dijon in a bowl. Add to sausage mixture; toss. Stir in shredded cheese. Cover, and refrigerate at least 2 hours or overnight.
- Preheat oven to 350°F. Spoon sausage mixture into a lightly greased 13 x 9-inch baking dish. Scatter cream cheese over top of mixture and sprinkle with seasoning, if using.
- Bake 35 to 45 minutes or until center is puffed and set.
