Parmesan-Crusted Pork Chops

Ingredients

  • 2¼ lb boneless pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 3 Tbsp olive oil

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle pork with salt and pepper. Whisk eggs in a shallow dish; combine breadcrumbs and cheese in a second shallow dish.
  2. Dip pork in egg mixture, letting excess drip off; dredge in breadcrumb mixture, pressing gently to adhere.
  3. Cook pork, in batches, in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until done.

Side Dish Ingredients

  • 1½ cups quick cooking grits
  • 1 cup shredded Cheddar cheese
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Cook grits according to package directions. Stir in cheese and ½ tsp salt and pepper.
  2. Meanwhile, cook broccoli according to package directions. Toss with ¼ tsp each salt and pepper.
