Parmesan-Crusted Pork Chops
Cheddar Grits and Broccoli
Ingredients
- 2¼ lb boneless pork chops
- ½ tsp salt
- ½ tsp pepper
- 2 large eggs
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- 3 Tbsp olive oil
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle pork with salt and pepper. Whisk eggs in a shallow dish; combine breadcrumbs and cheese in a second shallow dish.
- Dip pork in egg mixture, letting excess drip off; dredge in breadcrumb mixture, pressing gently to adhere.
- Cook pork, in batches, in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until done.

- 1½ cups quick cooking grits
- 1 cup shredded Cheddar cheese
- ¾ tsp salt, divided
- ¾ tsp pepper, divided
- 2 (12-oz) pkg broccoli florets
Side Dish Instructions
- Cook grits according to package directions. Stir in cheese and ½ tsp salt and pepper.
- Meanwhile, cook broccoli according to package directions. Toss with ¼ tsp each salt and pepper.
