Mozzarella Bruschetta Chicken
Summer Salad
Ingredients
- 2¼ lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 6 oz fresh mozzarella cheese, cut into 6 slices
- ¾ cup bruschetta topping
- 3 Tbsp balsamic vinegar
- ¼ cup chopped fresh basil
Instructions
- Preheat broiler. Pound chicken to an even thickness between plastic wrap using a meat mallet.
- Cook chicken, in batches if necessary, in hot oil in a large cast-iron or overproof skillet 5 to 6 minutes per side or until done.
- Top with cheese; broil 2 minutes or until cheese melts. Top with bruschetta topping and balsamic vinegar. Sprinkle with basil.
Side Dish Ingredients
- 6 cups spring mix
- 2 peaches, sliced
- 1 cup blueberries
- 6 Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
