Crispy Chickpea Pita Wrap

Ingredients

  • 2 (15-oz) cans chickpeas, rinsed and drained
  • 1 Tbsp olive oil
  • 1½ tsp chili powder
  • 1 tsp onion powder
  • ½ tsp garlic salt
  • 6 pita wraps
  • 6 Tbsp tzatziki sauce
  • 6 Tbsp garlic hummus 
  • 2 cups shredded lettuce
  • 1 red onion, sliced 
  • 3 Roma tomatoes, thinly sliced
  • ¼ cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F. Toss together chickpeas, oil, chili powder, onion powder, and garlic salt on a large rimmed baking sheet; spread in a single layer. Bake 30 minutes or until browned and crisp, stirring half way through baking.
  2. Meanwhile, warm pita according to package directions. Spread 1 Tbsp each tzatziki and hummus on each pita. Fill pita with lettuce, chickpeas, onion, tomato, and cheese.

Side Dish Ingredients

  • 1 (10-oz) pkg chopped romaine lettuce
  • 1 cucumber, sliced
  • ½ red onion, thinly sliced
  • 1 (2.25-oz) can sliced black olives, drained
  • ½ cup light balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
