Crispy Chickpea Pita Wrap
Quick Greek Salad
Ingredients
- 2 (15-oz) cans chickpeas, rinsed and drained
- 1 Tbsp olive oil
- 1½ tsp chili powder
- 1 tsp onion powder
- ½ tsp garlic salt
- 6 pita wraps
- 6 Tbsp tzatziki sauce
- 6 Tbsp garlic hummus
- 2 cups shredded lettuce
- 1 red onion, sliced
- 3 Roma tomatoes, thinly sliced
- ¼ cup crumbled feta cheese
Instructions
- Preheat oven to 400°F. Toss together chickpeas, oil, chili powder, onion powder, and garlic salt on a large rimmed baking sheet; spread in a single layer. Bake 30 minutes or until browned and crisp, stirring half way through baking.
- Meanwhile, warm pita according to package directions. Spread 1 Tbsp each tzatziki and hummus on each pita. Fill pita with lettuce, chickpeas, onion, tomato, and cheese.
Side Dish Ingredients
- 1 (10-oz) pkg chopped romaine lettuce
- 1 cucumber, sliced
- ½ red onion, thinly sliced
- 1 (2.25-oz) can sliced black olives, drained
- ½ cup light balsamic vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
