Ingredients

  • ½ (1-lb) loaf ciabatta bread
  • ½ (6.5-oz) jar pesto
  • ½ (8-oz) ball fresh mozzarella cheese, sliced
  • 1 large tomato, sliced
  • 1 avocado, sliced
  • 1½ cups baby arugula
  • ¼ tsp pepper
  • 1 Tbsp olive oil

Instructions

  1. Cut ciabatta into 3 squares; cut each square in half lengthwise.
  2. Spread pesto on cut sides of ciabatta. Layer ciabatta bottoms with cheese, tomato, avocado, and arugula; sprinkle with pepper, and cover with ciabatta tops to assemble sandwiches.
  3. Brush outsides of sandwiches with oil. Cook in a grill pan (or panini press) over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted.

Side Dish Ingredients

  • 1 pint grape tomatoes, halved
  • 1 bell pepper, chopped
  • ½ English cucumber, cut into half moons
  • 2 Tbsp olive oil vinaigrette

  1. Toss together all ingredients in a medium bowl.
