Ingredients
- ½ (1-lb) loaf ciabatta bread
- ½ (6.5-oz) jar pesto
- ½ (8-oz) ball fresh mozzarella cheese, sliced
- 1 large tomato, sliced
- 1 avocado, sliced
- 1½ cups baby arugula
- ¼ tsp pepper
- 1 Tbsp olive oil
Instructions
- Cut ciabatta into 3 squares; cut each square in half lengthwise.
- Spread pesto on cut sides of ciabatta. Layer ciabatta bottoms with cheese, tomato, avocado, and arugula; sprinkle with pepper, and cover with ciabatta tops to assemble sandwiches.
- Brush outsides of sandwiches with oil. Cook in a grill pan (or panini press) over medium heat, pressing sandwiches down using a heavy skillet, 2 to 3 minutes per side or until toasted.
Side Dish Ingredients
- 1 pint grape tomatoes, halved
- 1 bell pepper, chopped
- ½ English cucumber, cut into half moons
- 2 Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a medium bowl.
