Peach-Glazed Pork Chops

Ingredients

  • 2 lb boneless pork chops
  • 2 Tbsp olive oil
  • ¾ cup peach preserves
  • 2 Tbsp apple cider vinegar
  • ½ tsp dried thyme

Instructions

  1. Season pork with salt and pepper, if desired. Cook pork, in batches if necessary, in hot oil in a large skillet over medium-high heat 4 minutes per side or until browned.
  2. Reduce heat to medium; add preserves, vinegar, and thyme. Cook 3 to 4 minutes or until glaze is thickened and pork is done.

Side Dish Ingredients

  • 2 (8-oz) pkg thin green beans
  • 3 Tbsp butter
  • 1 (32-oz) pkg refrigerated mashed potatoes

Side Dish Instructions

  1. Steam beans according to package directions; toss with butter. Season with salt and pepper, if desired.
  2. Heat potatoes according to package directions.
