Peach-Glazed Pork Chops
Buttered Green Beans and Mashed Potatoes
Ingredients
- 2 lb boneless pork chops
- 2 Tbsp olive oil
- ¾ cup peach preserves
- 2 Tbsp apple cider vinegar
- ½ tsp dried thyme
Instructions
- Season pork with salt and pepper, if desired. Cook pork, in batches if necessary, in hot oil in a large skillet over medium-high heat 4 minutes per side or until browned.
- Reduce heat to medium; add preserves, vinegar, and thyme. Cook 3 to 4 minutes or until glaze is thickened and pork is done.
Side Dish Ingredients
- 2 (8-oz) pkg thin green beans
- 3 Tbsp butter
- 1 (32-oz) pkg refrigerated mashed potatoes
Side Dish Instructions
- Steam beans according to package directions; toss with butter. Season with salt and pepper, if desired.
- Heat potatoes according to package directions.
