Italian Sausage and Tortellini Skillet

Ingredients

  • 1 (19-oz) pkg mild Italian sausage, casings removed
  • 1 onion, chopped
  • 1 Tbsp minced garlic
  • 1 (14.5-oz) can Italian style petite diced tomatoes
  • ¾ cup chicken broth
  • ½ cup heavy cream
  • 1 (9-oz) pkg refrigerated cheese tortellini
  • 1 (10-oz) container baby spinach
  • 1 cup shredded Parmesan cheese

Instructions

  1. Cook sausage, onion, and garlic in a large deep skillet over medium-high heat until sausage is browned and crumbly; drain, if needed and return to skillet.
  2. Add tomatoes, broth, and cream to skillet; bring to a boil.
  3. Stir in tortellini; reduce heat, cover, and simmer 10 to 12 minutes or until tortellini are tender. Gradually stir in spinach until wilted.
  4. Season with salt and pepper, if desired; sprinkle with cheese.
