Cowboy Beef Chili Skillet

Ingredients

  • 1½ lb ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 (15-oz) cans pinto beans, rinsed and drained
  • 1 (15-oz) can whole kernel corn, drained
  • 2 (10-oz) cans fire roasted diced tomatoes with green chiles
  • 2 cups beef broth
  • 1 (1.25-oz) envelope chili seasoning mix
  • 1½ cups shredded Monterey Jack cheese

Instructions

  1. Cook beef, onion, and bell pepper in a large, deep skillet over medium-high heat until beef is browned and crumbly; drain, and return to skillet.
  2. Stir in beans, corn, diced tomatoes, broth, and seasoning mix; simmer 10 minutes or until mixture is thickened. Sprinkle with cheese; cover, and let stand until cheese is melted.
