Cowboy Beef Chili Skillet
Ingredients
- 1½ lb ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 (15-oz) cans pinto beans, rinsed and drained
- 1 (15-oz) can whole kernel corn, drained
- 2 (10-oz) cans fire roasted diced tomatoes with green chiles
- 2 cups beef broth
- 1 (1.25-oz) envelope chili seasoning mix
- 1½ cups shredded Monterey Jack cheese
Instructions
- Cook beef, onion, and bell pepper in a large, deep skillet over medium-high heat until beef is browned and crumbly; drain, and return to skillet.
- Stir in beans, corn, diced tomatoes, broth, and seasoning mix; simmer 10 minutes or until mixture is thickened. Sprinkle with cheese; cover, and let stand until cheese is melted.
