Ingredients

  • 1 lb lean ground beef
  • 1 onion, chopped
  • 12 oz elbow macaroni
  • 1 (28-oz) can diced tomatoes
  • 2 cups less sodium beef broth
  • 1 cup water
  • 1 Tbsp tomato paste
  • ½ tsp dry mustard
  • ½ tsp salt
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cook beef and onion in a large greased Dutch oven over medium heat 6 to 8 minutes or until browned.
  2. Add pasta, diced tomatoes, broth, water, tomato paste, mustard, and salt. Bring to a boil; cover, reduce heat to low, and simmer 12 minutes or until pasta is tender.
  3. Stir in cheese just before serving.

Side Dish Ingredients

  • 2 Honeycrisp apples, thinly sliced
  • 1 Tbsp lemon juice
  • 1 (5-oz) pkg arugula
  • 2 cups tricolor coleslaw, coarsely chopped
  • ⅓ cup olive oil vinaigrette
  • ¼ cup shelled salted sunflower seeds
  • ½ tsp pepper

Side Dish Instructions

  1. Toss together apples and lemon juice in a large bowl. Add arugula, slaw, apples, vinaigrette, sunflower seeds, and pepper; toss.
