One-Pot Cheeseburger Pasta

Ingredients
- 1 lb lean ground beef
- 1 onion, chopped
- 12 oz elbow macaroni
- 1 (28-oz) can diced tomatoes
- 2 cups less sodium beef broth
- 1 cup water
- 1 Tbsp tomato paste
- ½ tsp dry mustard
- ½ tsp salt
- 1 cup shredded Cheddar cheese
Instructions
- Cook beef and onion in a large greased Dutch oven over medium heat 6 to 8 minutes or until browned.
- Add pasta, diced tomatoes, broth, water, tomato paste, mustard, and salt. Bring to a boil; cover, reduce heat to low, and simmer 12 minutes or until pasta is tender.
- Stir in cheese just before serving.
Side Dish Ingredients
- 2 Honeycrisp apples, thinly sliced
- 1 Tbsp lemon juice
- 1 (5-oz) pkg arugula
- 2 cups tricolor coleslaw, coarsely chopped
- ⅓ cup olive oil vinaigrette
- ¼ cup shelled salted sunflower seeds
- ½ tsp pepper
Side Dish Instructions
- Toss together apples and lemon juice in a large bowl. Add arugula, slaw, apples, vinaigrette, sunflower seeds, and pepper; toss.
