Green Goddess Chicken Thighs
Roasted Tomato Brown Rice and Green Beans
Ingredients
- 1½ lb boneless, skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- ¾ cup green goddess dressing
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
- Reduce heat to medium. Stir in dressing; cook 2 minutes or until thoroughly heated, turning to coat chicken.
Side Dish Ingredients
- 2 pints grape tomatoes
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 3 (3.5-oz) pouches boil in bag brown rice
- 2 (8-oz) pkg thin green beans
- 3 Tbsp chopped fresh chives
Side Dish Instructions
- Preheat oven to 425°F. Toss together tomatoes, oil, salt, and pepper on a large rimmed baking sheet; spread in a single layer. Roast 15 minutes or until tomatoes begin to burst.
- Meanwhile, cook rice and green beans separately according to package directions. Toss together rice, tomatoes, and chives.
