Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • ¾ cup green goddess dressing

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
  2. Reduce heat to medium. Stir in dressing; cook 2 minutes or until thoroughly heated, turning to coat chicken.

Side Dish Ingredients

  • 2 pints grape tomatoes
  • 3 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 3 (3.5-oz) pouches boil in bag brown rice
  • 2 (8-oz) pkg thin green beans
  • 3 Tbsp chopped fresh chives

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together tomatoes, oil, salt, and pepper on a large rimmed baking sheet; spread in a single layer. Roast 15 minutes or until tomatoes begin to burst.
  2. Meanwhile, cook rice and green beans separately according to package directions. Toss together rice, tomatoes, and chives.
