Tex-Mex Caesar Salad

Ingredients
- ¾ lb boneless, skinless chicken breasts
- ½ (1-oz) envelope taco seasoning mix
- 1 Tbsp olive oil
- 1 (8.8-oz) chopped Caesar salad kit
- ½ (15-oz) can black beans, rinsed and drained
- ½ cup frozen whole kernel corn, thawed
- ½ pint grape tomatoes, halved
- ½ avocado, chopped
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle with seasoning. Cook chicken in hot oil in a nonstick skillet over medium heat 5 to 6 minutes per side or until done. Let stand 5 minutes; coarsely chop or slice.
- Meanwhile, prepare salad kit according to package directions in a bowl. Add beans, corn, and tomatoes; toss.
- Divide salads between 2 plates; top with chicken and avocado.
