Ingredients

  • ¼ cup sliced onion
  • 2 tsp olive oil, divided
  • ½ lb ground sirloin
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp mayonnaise
  • 2 whole wheat hamburger buns
  • 2 leaves butter lettuce
  • 1 Roma tomato, sliced
  • ¼ cup crumbled blue cheese

Instructions

  1. Cook onion, covered, in hot oil in a skillet over medium heat 10 minutes. Uncover, increase heat to medium-high, and cook 5 minutes or until tender and browned, stirring occasionally.
  2. Meanwhile, combine beef, salt, and pepper in a bowl; shape into 2 patties. Cook in hot oil in a grill pan or cast-iron skillet 5 minutes per side or until no longer pink.
  3. Spread mayonnaise on buns. Serve burgers on buns with lettuce, tomato, onions, and cheese.

Side Dish Ingredients

  • 2 cups chopped romaine lettuce
  • 1 Roma tomato, sliced
  • ½ cup sliced English cucumber
  • ¼ cup shredded carrots
  • 2 Tbsp olive oil vinaigrette

  1. Toss together all ingredients in a medium bowl.
