Blue Cheese Burgers

Ingredients
- ¼ cup sliced onion
- 2 tsp olive oil, divided
- ½ lb ground sirloin
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 Tbsp mayonnaise
- 2 whole wheat hamburger buns
- 2 leaves butter lettuce
- 1 Roma tomato, sliced
- ¼ cup crumbled blue cheese
Instructions
- Cook onion, covered, in hot oil in a skillet over medium heat 10 minutes. Uncover, increase heat to medium-high, and cook 5 minutes or until tender and browned, stirring occasionally.
- Meanwhile, combine beef, salt, and pepper in a bowl; shape into 2 patties. Cook in hot oil in a grill pan or cast-iron skillet 5 minutes per side or until no longer pink.
- Spread mayonnaise on buns. Serve burgers on buns with lettuce, tomato, onions, and cheese.

- 2 cups chopped romaine lettuce
- 1 Roma tomato, sliced
- ½ cup sliced English cucumber
- ¼ cup shredded carrots
- 2 Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a medium bowl.
