Ingredients

  • ¾ lb peeled and deveined, large raw shrimp
  • 1 Tbsp blackened seasoning
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • ½ lemon, cut into wedges

Instructions

  1. Sprinkle shrimp with blackened seasoning.
  2. Melt butter with oil in a nonstick skillet over medium heat. Add shrimp; cook 2 to 3 minutes per side or until shrimp are done. Serve with lemon wedges.

  • 1 ear corn, shucked and halved
  • 1 Tbsp butter
  • 2 bell peppers, cut into 1 inch strips
  • 1 Tbsp olive oil
  • ¾ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Boil corn in water to cover in a pot 8 to 10 minutes or until tender. Spread butter on corn.
  2. Meanwhile, toss together bell peppers, oil, garlic powder, salt, and pepper on a greased rimmed baking sheet; spread in a single layer. Bake 10 to 15 minutes or until blistered and tender.
