Creamy Garlic-Parmesan Chicken
Crispy Potatoes and SpinachIngredients
- ½ lb boneless, skinless chicken thighs
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 Tbsp olive oil
- ⅓ cup heavy cream
- ¼ cup less sodium chicken broth
- ¼ cup freshly grated Parmesan cheese
- 2 tsp minced garlic
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a skillet over medium-high heat 5 minutes per side or until done.
- Meanwhile, bring cream and broth to a boil in a small saucepan. Stir in cheese and garlic; reduce heat, and simmer 5 minutes or until thickened. Spoon sauce over chicken.

- ½ (20-oz) pkg frozen shredded hash browns
- 1 Tbsp olive oil
- ⅛ tsp pepper
- 2 cups spinach
- 1 Tbsp minced garlic
Side Dish Instructions
- Preheat oven to 450°F. Spread hash browns in a single layer on a rimmed baking sheet. Drizzle with oil; sprinkle with pepper. Bake 25 minutes or until crispy.
- Toss together potatoes, spinach, and garlic until spinach wilts.
