Basil-Garlic Orzo

Ingredients
- 1½ lb boneless, skinless chicken breasts
- ½ tsp kosher salt
- 5 Tbsp olive oil, divided
- 2 (12-oz) jars roasted red peppers, drained
- ¼ cup almond butter
- 2 Tbsp lemon juice
- 1 tsp paprika
- 1 (5-oz) pkg baby spinach
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle chicken with salt; cook in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes or until done.
- Meanwhile, process roasted peppers, ¼ cup oil, almond butter, lemon juice, and paprika in a blender or food processor until smooth, scraping sides as needed.
- Add roasted pepper mixture and spinach to skillet with chicken. Cook 3 minutes or until sauce is thoroughly heated and spinach wilts.

- Cook orzo according to package directions; drain, and toss with remaining ingredients.
