Bruschetta Pasta

Ingredients

  • ½ (16-oz) pkg whole wheat linguine
  • 1 (6-oz) pkg baby spinach
  • 2 cloves garlic, minced
  • 1½ Tbsp olive oil
  • 2 tomatoes, diced
  • 2 Tbsp chopped fresh basil
  • 1½ Tbsp balsamic vinegar
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¾ cup freshly grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
  2. Cook spinach and garlic in hot oil in a nonstick skillet over medium heat, stirring often, until spinach wilts.
  3. Add tomatoes, basil, vinegar, salt, and pepper; cook 1 minute. Add pasta and enough pasta water to make a thin sauce; toss. Sprinkle with cheese.
