Bruschetta Pasta

Ingredients
- ½ (16-oz) pkg whole wheat linguine
- 1 (6-oz) pkg baby spinach
- 2 cloves garlic, minced
- 1½ Tbsp olive oil
- 2 tomatoes, diced
- 2 Tbsp chopped fresh basil
- 1½ Tbsp balsamic vinegar
- ¼ tsp salt
- ¼ tsp pepper
- ¾ cup freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, reserving ¼ cup pasta water.
- Cook spinach and garlic in hot oil in a nonstick skillet over medium heat, stirring often, until spinach wilts.
- Add tomatoes, basil, vinegar, salt, and pepper; cook 1 minute. Add pasta and enough pasta water to make a thin sauce; toss. Sprinkle with cheese.
