Skillet Turkey Pastitsio

Ingredients
- 12 oz whole grain penne pasta
- 5 Tbsp butter, divided
- ¼ cup all purpose flour
- 2 cups whole milk
- 2 egg yolks
- ¾ cup freshly grated Parmesan cheese, divided
- ½ tsp kosher salt, divided
- ½ tsp pepper, divided
- 1 lb ground turkey
- 1 Tbsp minced garlic
- 1 cup canned whole San Marzano tomatoes
- 2 Tbsp tomato paste
- 1 tsp ground cinnamon
- ½ tsp granulated sugar
Instructions
- Preheat oven to 400°F. Cook pasta according to package directions.
- Meanwhile, melt ¼ cup butter in a large ovenproof skillet over medium heat. Whisk in flour until paste forms; cook, stirring, 1 minute.
- Gradually whisk in milk; cook, stirring, 3 to 5 minutes or until thickened; remove skillet from heat. Whisk in egg yolks, ¼ cup cheese, and ¼ tsp each salt and pepper. Transfer white sauce to a bowl.
- Wipe skillet clean. Melt 1 Tbsp butter in skillet over medium heat; add turkey and garlic. Cook 7 to 8 minutes or until turkey is brown and crumbly.
- Stir in tomatoes, tomato paste, cinnamon, sugar, and ¼ tsp each salt and pepper; simmer 5 minutes, mashing tomatoes with a wooden spoon to desired consistency.
- Stir in pasta and half of white sauce; top with remaining white sauce and ½ cup cheese. Bake 10 to 15 minutes or until hot and bubbly.
