Ranch Chicken, Broccoli, and Potato Casserole

Ingredients

  • 1 (1.5-lb) bag baby red potatoes, halved
  • 1 (12-oz) pkg broccoli florets
  • 4 Tbsp butter, divided
  • 1½ lb boneless, skinless, chicken breasts, cubed
  • 1 (1-oz) envelope Ranch dressing mix, divided
  • 2 Tbsp all purpose flour
  • 1½ cups chicken broth
  • ½ (8-oz) block cream cheese, softened
  • ½ cup sour cream
  • 1 (8-oz) pkg shredded Cheddar cheese, divided
  • ¾ cup panko breadcrumbs

Instructions

  1. Preheat oven to 375°F. Combine potatoes and water to cover in a large Dutch oven; bring to a boil over medium-high heat. Reduce heat, and simmer 8 to 10 minutes or until fork tender; drain and place in a lightly greased 13- x 9-inch baking dish.
  2. Steam broccoli according to package directions; spread over potatoes.
  3. Meanwhile, melt 2 Tbsp butter in a large skillet over medium heat. Add chicken, and cook, stirring occasionally, until done. Add 2 Tbsp dressing mix and flour; cook, stirring constantly, 2 minutes. Add broth, and cook until mixture is thickened and bubbly; stir in cream cheese, sour cream, and 1 cup Cheddar until blended.
  4. Pour mixture over broccoli in baking dish. Sprinkle with remaining 1 cup Cheddar.
  5. Melt remaining 2 Tbsp butter in a skillet over medium heat. Add breadcrumbs and remaining dressing mix; cook until breadcrumbs are toasted. Sprinkle over Cheddar. Bake 25 to 30 minutes or until hot and bubbly.

  • 1 (16.3-oz) can refrigerated flaky biscuit dough
  • 2 Tbsp granulated sugar
  • 1 Tbsp orange zest
  • 3 Tbsp butter, melted
  • ½ cup powdered sugar
  • 1 Tbsp orange juice

Side Dish Instructions

  1. Preheat oven to 375°F. Separate biscuits, and cut each biscuit in thirds. Place 3 biscuit pieces in each cup of a lightly greased 12-cup standard muffin pan.
  2. Stir together granulated sugar and orange zest in a bowl.
  3. Brush tops of biscuits with melted butter; sprinkle with granulated sugar mixture. Bake 10 to 15 minutes or until golden.
  4. Whisk together powdered sugar and orange juice; drizzle over hot rolls.
