Baked Louisiana Shrimp

Roasted Asparagus and Brown Rice

Ingredients

  • 1½ lb peeled and deveined, large raw shrimp
  • ¼ cup lemon juice
  • 3 Tbsp salt free Cajun seasoning
  • 2 Tbsp less sodium soy sauce
  • 2 Tbsp canola oil
  • ¼ tsp pepper
  • 4 cloves garlic, minced
  • 3 lemons, cut in half

Instructions

  1. Preheat oven to 400°F  Place shrimp in a 13- x 9-inch baking dish.
  2. Whisk together lemon juice, seasoning, soy sauce, oil, pepper, and garlic. Toss with shrimp.
  3. Bake 10 minutes or until shrimp are done. Serve with lemons.

  • 2 lb asparagus, trimmed
  • 2 Tbsp canola oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 (3.5-oz) pouches boil in bag brown rice

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together asparagus, oil, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Roast 15 to 18 minutes or until asparagus is crisp-tender.
  3. Meanwhile, cook rice according to package directions.
