Creamy Salsa Verde Chicken Skillet
Brown Rice
Ingredients
- ½ lb boneless, skinless chicken breasts, cubed
- 1 cup frozen corn kernels
- ¼ cup chopped onion
- 1 Tbsp less sodium taco seasoning mix
- 2 tsp olive oil
- ½ cup salsa verde
- 2 oz ⅓ less fat cream cheese, cubed
- 2 Tbsp chopped fresh cilantro
Instructions
- Cook chicken, onion, corn, and taco seasoning in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until chicken is done.
- Stir in salsa and cream cheese, stirring until melted and combined. Sprinkle with cilantro.
