Ingredients

  • ½ lb boneless, skinless chicken breasts, cubed
  • 1 cup frozen corn kernels
  • ¼ cup chopped onion
  • 1 Tbsp less sodium taco seasoning mix
  • 2 tsp olive oil
  • ½ cup salsa verde
  • 2 oz ⅓ less fat cream cheese, cubed
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Cook chicken, onion, corn, and taco seasoning in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until chicken is done.
  2. Stir in salsa and cream cheese, stirring until melted and combined. Sprinkle with cilantro.
